[How to make it]
1. Put the white in a mixer bowl, whisk it to 60%, and add sugar little by little to make 100% meringue.
2. Mix sieved almond powder, sugar powder, and flour with 1 meringue.
3. Fill the piping bag with batter and squeeze it into a dacquoise mold.
4. Use a spatula to select the top and sprinkle sugar powder.
5. Bake in an oven at 200 degrees above heat and 160 degrees below heat for 10 to 12 minutes.
6. Squeeze caramel cream between two sheets of dacquoise and complete it.
